My husband really likes take-out Chinese food. A normal person might spend, what? 5 minutes checking out menus on GrubHub before making a decision about the night's meal? He's likely to spend 30+ minutes poring over his iPad in anticipation of a meal that we usually agree wasn't all that great after we eat it.
So imagine my surprise when he agreed with me when I suggested, after one bite of this meal, that we never again order Chinese food again. Seriously, he agreed!
Take that as proof (**actual proof**) that this recipe is incredible. Easy General Tso Chicken, from 101 Cooking for Two (a very awesome new blog I recently discovered!) was amazing. Way better than take-out Chinese. Way healthier. And super easy to make.
I'd never done this before, but the diced chicken was tossed in a mixture of egg whites and cornstarch that created this wonderfully light breading on the chicken that soaked up all of the incredible sauce. Seriously, you will never need to order Chinese take-out again.
After one bite of this next recipe, my husband proclaimed, "This is a repeater!" Seriously, it made it on to this week's menu for Thursday. No joke.
Absolutely incredible, this was Leek and Mushroom Boursin Orzo from Table for Two blog. It starts with sautéed leeks (which next time I won't cut so thinly so they hold up more through the cooking), you add diced portobellos to soften, then pour in some stock and orzo and let it simmer. Once the pasta is cooked, you add half a round of Boursin cheese. And then you take a bite and think you've died and gone to heaven.
