R-cubed, my New Year's resolution to try 3 new recipes a week, is off to a great start! Feast your eyes on the recipes I've made so far, then follow the links to get the recipes to try them yourself!
Another New Years resolution I made is "dessert and drinking only on the weekends in January." So that meant I got to try a dessert recipe on Saturday night! Check out this Apple Cake recipe from Midwest Living. I opted out of "cakelets" and instead poured the batter into a 9x9 square pan and cooked the batter for 26 minutes. Served squares of cake with walnuts and "caramel" (in quotes because mine didn't technically become caramel but it still tasted AMAZING so who cares anyways). Fortunately I have a nearly full mason jar of this not-so-caramel caramel sauce in the fridge for next weekend.
And finally, tonight! Greeting the week with a bang (and not feeling drop-kicked like last Monday): White Bean and Barley Soup with Tomatoes and Greens from Real Simple. This recipe is a keeper that I definitely will make again! Used only 4 cups of broth (the recipe calls for 6) to make for a thicker, creamier, more tomato-y soup. I used kale for the "greens," and the barley is terrific (even my husband thought so, and he's often skeptical about such things). Bon appetit!!
